INGREDIENTS:
- 1‐Ciabatta Bun
- ½‐Avocado
- 2‐Slices of your Favorite Cheese (My preference is Pepper‐Jack)
- 3‐Slices Smoked Turkey
- A large handful of Jalapeño Potato Chips
- Your favorite Mayo (I use vegan or cholesterol‐free mayo)
- 4‐TBSPs Margarine
DIRECTIONS:
- Slice your Ciabatta bun in about a ⅓ to ⅔ split, the top part being the larger of the two
- Spread the margarine equally along the insides of the portions of the bun
- Toast the Ciabatta bun portions in an oven or toaster‐oven at about 350°, sliced sides up
- While toasting the bun slices, slice your avocado in half and use a sharp knife to dice ½ of the avocado while leaving it in the skin. Save the other half for another recipe
- After that, prep your cheese, turkey slices and Jalapeño potato chips to place on the sandwich
- Remove the bottom portion of the Ciabatta bun from the oven or toaster‐oven leaving the top potion to toast longer
- Scoop the chunks of avocado from the skin using a small spoon and spread them on the bottom portion of the bun
- Cover the avocado with 3 slices of turkey
- Lay the 2 slices of cheese over the turkey and place the bottom of the sandwich back in the oven while removing the top from the oven
- Spread your mayo on the top of the sandwich
- Once the cheese has melted, remove the bottom half of your sandwich from the oven, and place on a plate
- Take your large handful of Jalapeño chips and press them into the cheese
- Then smash the top of the sandwich onto the chips to help hold the chips on the sandwich

When I first made this, I thought there was no way I was going to like it. Now it is one of my favorite (easy to prepare), crunchy sandwiches.
This recipe is actually more of a quickie build as you’re not making the bun, mayo, cheese or potato chips, and you’re not cooking your own turkey.
If you want to do all that, knock yourself out, but just building the sandwich is a whole lot easier.
And of course, you can try all kinds of variations of this, but I find the spiciness of the chips and Pepper‐Jack cheese compliment the avocado while the softness of it all also combines well with the satisfying crunch of the chips.
